TKC Irish Coffee, a.k.a., Leprechaun Libation

I developed this version of Irish Coffee one night after I had tried a few and found them lacking. I believe you, and any lurking Leprechauns will find it just the thing for that cold night in front of a fire, after dinner drink, St. Patrick’s Day, when your mother-in-law is in town…you get the idea.

TKC Irish Coffee

  • Hot coffee (any kind will do - decaf, high test, flavored, Columbian, what ever you prefer)
  • Irish Whiskey (one jigger, give or take)
  • Raw sugar, 1 or 2 tbsp or enough to cover the bottom of the cup you're using - If you don't have Raw Sugar, don't let that stop you
  • Chocolate Syrup - 1 or 2 tbsp, depending on how much of a chocoholic you are
  • Whipped Cream
  • Green sprinkles, optional

Cover the bottom of your Irish Coffee cup with raw sugar. Cover the sugar with Irish Whiskey.
Add the chocolate syrup.
Add the hot coffee to within about 1" from the top of the cup. Stir well to insure that the sugar and chocolate are well incorporated.
Top with whipped cream and, if desired, green sprinkles.

I have served this after dinner many times. When I ask if anyone wants Irish Coffee, maybe one or two people will say yes. When the Irish Coffees are brought to the table (or living room or deck or where ever we’re having coffee), I usually have to make several more. At any rate, these should keep those Leprechauns happy. And, I have found only one way to improve on this recipe – make it in a bigger cup! Erin Go Bragh!
