Take It Out on the Lettuce

I don’t often use regular head lettuce, but when I do, I don’t use a knife. Simply place the lettuce on a firm surface, core up. Punch it with your fist or smack it with the palm of your hand 2 or 3 times and the core will loosen and you can pull it right out. It doesn’t really save time, but it makes for a great bit of culinary theater if people are watching. And besides, you’re supposed to tear lettuce, not cut it. That allows the dressing to adhere and soak in better, or, so they say.

Fran tells me she grasps the lettuce on both sides of the head, core down, and smacks it on the counter once or twice. That works, too.
