Potatoes With Garlic and Dill

I’m not real sure where the idea for this recipe came from, aside from the fact that I like everything in it. How I came to put it together, who knows? I think there’s another lesson here. If it crosses your mind and seems like it might be good, try it. The worse that can happen is that you don’t make it again..ever. As a matter of fact, that’s one of the acid tests in my house. “Should we have this again?”

Potatoes With Garlic and Dill


  • Potatoes (4 lbs Baby New Reds, quartered)
  • Garlic, minced (2 tbsp, more or less - you can use garlic salt or garlic powder)
  • Dill (approx. 4 or 5 tbsp, dried or fresh)
  • Butter (6 – 8 tsps)


Place quartered potatoes in a pot of cold water and bring to a boil. Reduce heat slightly and cook until fork tender (fork in, fork out with little or no resistace). Drain. Return to the pan or place in a bowl. Depends on if you’re taking the bowl to the table or your family/friends are serving themselves from the stove (which we do a lot in my house).
Add butter, garlic and dill. Mix well.
Taste, adjust seasoning if necessary and enjoy!
