Its Green Box Day! And this is Green Box Pasta

We discovered this service a while ago and just love it! Fresh fruits and vegetables are delivered to your home on a weekly or biweekly basis. They email the basic box contents well in advance and you have the opportunity to add to, subtract from or order something entirely different. The growing method is listed so you have total control over what is delivered and what you actually ingest.

 

 

 

Our deliveries are every other Thursday and we call it ” Green Box Day”. A green box just like this one appears on our deck.

 

 

 

 

 

It contains a variety of fresh fruits and vegetables. This is part of one delivery.

 

 

 

 

 

And this is what I did with a portion of one of the deliveries. I generally start with a recipe and work from there, but it was fun starting with the ingredients and making up the recipe. Here’s how it turned out.

Green box pasta

Ingredients

  • Fresh peas, approximately 1 lb, cut in half
  • Sliced mushrooms, 1/2 lb (I used cremini)
  • Chopped garlic, 1 or 2 tbsp (unless you live in my house, then its more like 4 or 5)
  • Chopped, fresh tomatoes (canned will work if you don't have any fresh)
  • Crab (4.25 oz can)
  • Capers, 2 or 3 tbsp
  • Bacon bits (make your own if you have time)
  • 1/2 to 1 cup chicken broth
  • Pasta of your choice
  • Parmesan cheese, grated

Directions

Melt a few tbsp of butter or olive oil in a large saute pan and add the fresh peas. They will take the longest to cook. Cook on medium heat for about 5 to 7 minutes.

Add the sliced mushrooms and garlic. Saute for approximately 10 minutes until mushrooms begin to soften. Stir gently 2 or 3 times.

Add the chopped tomatoes and crab and a little of the chicken broth. Bring to a simmer and stir gently a few times.

Add the capers and bacon bits. Stir a few times and continue to simmer until everything is heated through and the peas are tender. Serve over pasta (this is angel hair pasta), top with Parmesan cheese and prepare to enjoy!
