Fries, Glorious Fries

bacon/tomatoes...There are almost as many names for this side dish as their are variations to the recipe.  I have heard them called Garbage Fries, Loaded Fries, Dumpster Fries, Kitchen Sink Fries and more.  What ever you call them, they are goooood and a cut above regular fries with ketchup.  The basics consist of fries (obviously), bacon (browned and chopped), tomatoes (cubed small),  scallions (sliced) and the cheese of your choice.  I used a mix of Colby and Monterey Jack, shredded.

Prepare your fries as you normally would.  Drain on a paper towel and place on an oven-proof platter.  Sprinkle liberally with grated cheese and place under the broiler just long enough to melt the cheese.  Usually, no longer than one minute.

Sprinkle on the remaining ingredients and, ta-da!  These ain’t your Mama’s fries.  Variations are only limited by your imagination.  One of the obvious is jalapenos.  Personally, I don’t do hot so they do not appear in my house.   But have at it.  Some people actually put Ranch dressing over the whole thing.  Any thing you like, pile it on.  As far as cheese options are concerned, you can use any cheese that you happen to like.  If you would like something a little creamier, use cheese soup.  Just heat it and pour it on.   I haven’t tried it yet but I think ConQueso would be pretty good and I suppose there’s somebody out there that would even use Velveeta.  To each his own.  Let me know what you put on yours.  Enjoy!
