Fried Rice

Pair this dish with Egg Foo Young and take your friends or family on a trip to China.

Fried Rice

Ingredients

  • Cooked rice, 3 or 4 cups prepared in advance and refrigerated for several hours or overnight
  • 1 Cup cooked, diced chicken, beef, pork - what, ever you had for dinner last night - shrimp works well, too
  • 1 - 1 1/2 Cup Chinese vegetables (I use canned or you can assemble your own)
  • 1 or 2 eggs, beaten
  • 2 tbsp soy sauce
  • Oil for frying
  • Salt to taste

Directions

Heat oil in a large pan and add the scallions. Stir a a little.

Add meat and vegetables. When heated through, remove ingredients from pan.

Add a bit more oil and heat to smoking. Add rice and heat through, stirring often to prevent sticking.

Return the meat and the vegetables to the pan along with rice and stir well.

Add soy sauce and a little salt to taste.

Blend in the beaten eggs and continue to cook until eggs are just set. Pair with Egg Foo Young.
