Corned Beef and Cabbage

If you’ve been following us for a while, you may have already run across the Deli Corned Beef recipe. If not, check it out. This may be the time to try it.

To convert it to Corned Beef and Cabbage, all you need to do is, you guessed it, add cabbage. With about 2 hours cooking time left, add the cabbage. I like to cut a head into about 6 wedges. This is one time you might want to leave the core in. It helps keep the cabbage together. You can also do this in a slow cooker. Just put the wedges on top, thin side of the wedge down. If you use a slow cooker, and you have time, add the cabbage about half way through the cooking cycle of 6 to 8 hours. But, if you’re out playing with the Leprechauns all day and don’t want to bother, add it at the beginning. Serve with some soda bread, a good stout (I prefer double chocolate stout myself) and Erin Go Bragh!
