Brownies - Mom's Recipe

Chocolate! I admit that I do not have much of a sweet tooth but every so often I like a taste of chocolate and that is when I find myself digging through my recipe box for this old family recipe.These brownies were a part of my childhood. Mom would make a double batch when we needed something to take to a school party and they were usually a part of family gatherings. This recipe gives you a cakelike, chewy, walnutty, chocolatey (is that a word?) brownie. I like to ceremoniously place one small brownie on a plate, make a pot of tea, choose a pretty cloth napkin, put my feet up, close my eyes, and slowly savor the YUM! If it is summer I carry my pot and plate into the garden. My chocolate craving is satisfied and I know I have just had a hug from Mom.

Brownies – Mom’s Recipe
3 eggs
1 1/2 c. sugar
3 squares unsweetened chocolate
1/3 c. butter
1 1/3 c. flour
1 1/2 tsp. baking powder
1 tsp. vanilla
1 c. chopped nuts – I use walnuts

Melt the butter and chocolate together in the top of a double boiler.brownies 4 400

Beat the eggs until yellow and evenly mixed. Beat in the sugar, a little at a time until the mixture is smooth.

Add the melted chocolate and butter mixture to the eggs and sugar. I cool the chocolate a bit but if it is still warm all will be fine.  Mix until  smooth. With the mixer running carefully add the flour, baking powder, vanilla, and nuts and mix until everything is evenly incorporated.

Spread the mixture in 13×9 pan sprayed with Pam. Bake at 375° for about 1/2 hour.

Cool and sprinkle with sifted powdered sugar or top with Fluffy Cocoa Frosting.

Fluffy Cocoa Frosting – Mom’s Recipe
3/4 c. cocoa
4 c. confectioner’s sugar
1/2 c. butter
1 tsp. vanilla
1/2 c. evaporated milk – might need a bit more

Sift and then mix the cocoa and confectioner’s sugar. In a separate bowl, cream the butter and mix in about 1/3 to 1/2 of the cocoa sugar mixture. Add the vanilla to 1/4 cup of the milk and blend it into the butter mixture. Add the remaining cocoa sugar mixture and blend well. Add the remaining milk and beat to a smooth, spreadable consistency.You may need to add  a bit more milk to reach a smooth consistency. This recipe will give you enough for a two layer, 9 inch cake. Mom’s recipe says to use a half recipe for the brownies. Hmmm? I like a thick frosting so I use the whole thing! This is the perfect “Who wants to clean out the bowl” recipe?
