Apple Pan Walnut Cake

This cake has been in my recipe file box since the 1970’s. I was a Home Economics major in college and I remember making this cake for friends. The fact that this is still one of my “go to” cakes tells you something about this recipe! The ingredients are all basic pantry items  – except for the sour cream. I have labeled this recipe  a “pan” cake because the apples, dry ingredients, and wet ingredients are layered, mixed up, and baked in a 9×13 cake pan. I use home canned apples or home canned apple pie filling but a store bought can of apple pie filling will work. For the cake you will need:

1 can apple pie filling – I use 1 quart of home canned apples or home canned apple pie filling
2 c. all-purpose flour
1 c. sugar
1 1/2 teaspoon baking soda
1 teaspoon salt
2 eggs, beaten
1 teaspoon vanilla
2/3 c. oil, I use canola
3/4 c. chopped walnuts

For the topping you will need:
1 c. sugar
1/2 c. sour cream
1/2 teaspoon baking soda

Spread the pie filling in the bottom of a 9×13 cake pan. Combine the flour, sugar, baking soda, and salt in a bowl and sprinkle the mixture over the pie filling. In this picture you can’t see the apples – they are under the dry ingredients.

Combine the eggs, vanilla, oil, and 1/2 c. chopped nuts and mix well.

Pour the egg mixture over the apples and dry ingredients in the cake pan. Mix with a rubber spatula until the flour is well moistened and everything is evenly mixed. Smooth batter evenly in the pan.

Bake at 350° for 40 – 50 minutes until the cake springs back when lightly touched in the center. The edges should be slightly pulled away from the sides of the pan.

Just before the cake is done make the topping. Combine the sugar, sour cream, and baking soda in a saucepan. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Remove from heat.

Prick the warm cake with a fork and spread the warm topping over the cake. Sprinkle with the remaining 1/4 c. chopped walnuts.

Serve warm or cold. This is a moist cake and it helps to let it cool a bit before you cut into it. You can substitute pecans for the walnuts and,  depending on what I have in my pantry, I might substitute cherry or peach pie filling.

Apple Pan Walnut cake is something you might expect to eat for dessert at your Grandma’s house.  It’s simple, quick, comfort food. The best use for this cake?? Brew some coffee or tea, invite a few friends over, and  share  the comfort.
